Profile

John studied Hospitality Management at Cambridge and then Norwich Hotel School. This was followed by several years working at Claridge's and the Savoy in London in both food and Beverage and Rooms Division positions. John then worked as Restaurant Manager and Assistant Food and Beverage Manager in Kensington.

The London experience was followed by working abroad for several years, initially in Italy and then five star hotels in Monaco/Monte Carlo, Switzerland (Geneva), Paris and Nice as well as time spent in Austria and Germany.

John worked in the wine industry for a period of time in Italy, France and Australia. For two and a half years John was the Food and Beverage Manager at Hotel L'Horizon in Jersey, Channel Islands and then Rooms Division Manager back in England.

John taught for a number of years in colleges in England, as well as spending time in colleges in France, Switzerland and Holland. John studied and taught wine to a high level.

For over three years John was the Training and Development Manager for Gordon Ramsay Holdings and managed the training for the existing restaurants - Restaurant Gordon Ramsay in Chelsea (3 Michelin stars) and Gordon Ramsay at Claridge's (1 Michelin star) - as well as carrying out the training for the new restaurant launches - Petrus (2 Michelin stars), Angela Hartnett at The Connaught (1 Michelin star), Gordon Ramsay Boxwood Cafe (at The Berkeley Hotel), The Savoy Grill (1 Michelin star), Banquette, Pengelley's (Asian restaurant) and more recently Maze (1 Michelin star).
As well as setting up training for the group, John developed and managed consultancy services for Gordon Ramsay.

John teaches across a range of courses at Sheffield Hallam in particular Food and Beverage Management, Gastronomy and Culinary Arts and Wines. A particular interest and expertise is Customer Service.
